What can you expect from our Bourbon Red Christmas Turkeys
As a heritage breed, Bourbon Red turkeys have a narrower and higher breast bone that commercial turkey breeds, which results in a more even ratio of white-to-dark meat compared to standard commercial turkeys. Due to the slower growth rate and being raised in an active free-ranging environment, our Bourbon Red turkeys also have a healthy natural fat content that helps to make them wonderfully tender and moist.
How would we recommend you cook your turkey
We are often asked by our customers how we would recommend cooking a Bourbon Red for Christmas. We do have a very simple method that has consistently given us the most delicious roast turkey, and in case it helps, we have popped this below:
-
Once we have taken our turkey out of the fridge and let it come to room temperature, we simply rub a little oil all over the turkey and season it with salt and pepper before popping it in to the oven. As our turkeys have their natural fat content, we have found that you don't need to cover them with foil to keep them moist.
-
Temperature and time wise, we recommend to cook your turkey at ~180⁰C oven/ ~160⁰C fan oven) for 90 minutes for a 3kg turkey, increasing by 15 mins/ kg. If the skin needs to brown a bit more, we tend to then give it a quick blast at a higher temperature towards the end, but see what you think as this isn't always needed. What you'll likely notice is that your turkey takes less time to cook than a commercial breed, which is again due to the healthy fat content helping to carry the heat through the meat.
-
To check your turkey is cooked, you're looking for your meat thermometer to have reached 60⁰C (above 60⁰C runs the risk of overcooking it). If you don't have a thermometer, simply insert a metal skewer into the thickest part of the leg/ breast until it reaches the bone and if the juices run clear it's ready!
-
You're then ready to take your turkey out of the oven. We cover it with a tea towel and let it rest for 30-45 minutes. This helps the juices to redistribute, and gives us time to gently cook our veggies, roast our tatties, and make the gravy! Yum!
